I would even say you can run something more substantial on this thing, like database, home assistant, grafana. It supposedly supports 64gb RAM

I'm not defending them, but let's not make assumptions about the entire brand off of one anecdotal experience. People seem generally happy with them for the price. YMMV

Unless of course you want to run pure Linux. Or Win11 for some reason. There are valid use cases for these, and while Docker gets you around some of those use cases, not everyone want to deal with learning container management.
I say this as someone who has owned over 50 Macs over the course of his life and has almost always used a Mac as his primary machine. Macs are great and the M4 Mini has punch, no doubt. But it's important for people to get the right tools for the job. Firepower per dollar spent is just one aspect of things.

So can a m4 handle games on steam and can you have OneDrive from Microsoft and office 365 subscription service?
Where Plex needs a stronger machine is when it has to convert/transcode the files (NOTE: Adding subtitles may also require this).
Intel still looks to be the preferred lightweight CPU for transcoding, although AMD is reported to work (see https://support.plex.tv/articles/...streaming/ where Plex basically says "meh, give it a go, couldn't hurt, but we won't help support you with it") ... the CPU will likely be able to do one or two though, if it comes down to it, without using its GPU.
I picked up one of the other cheap boxes with an Intel N150 for ~$140 shipped and it's able to do 3-4 transcodes of 4k to 1080 at a time. Plex also doesn't use more than 4GB of memory pretty much ever, so, if you're running it on Linux, and it's dedicated to Plex, 16GB of memory would be overkill.
I do believe that Jellyfin has better support for AMD though, if that's a viable solution for you.
So ... this might work, my quick search for this specific CPU didn't show me anything though, so, I'd suggest having a backup plan for the machine in case it doesn't work.

This is on the level with M2 Mac mini which often goes for around 300$. So I would say the question is what you prefer Windows or Mac? If you want to play some games this is a clearly better option.
