I know after making 1K in 3 hours Fathers Day Weekend I would have one every other week if I had the time/energy. Or if we want to get all paranoid some T(or other store) employee trying to shut you down after seeing all their discounted products. Though that seems like a stretch. She was very friendly though and the only thing left in my basement from then was a bunch of paper plates I wasn't selling anyways.

What kind of pans are ya'll cooking them in? I use seasoned cast iron and haven't noticed a problem like that with pancakes.

Nope, don't make my own yogurt - have thought about trying as I've heard it's fairly easy and yummy. When dd was a baby and I needed whole milk yogurt I'd buy a tub of the Dannon natural plain yogurt....which runs around $2 minus any mq's. Now that she can have lower fat yogurt I just buy the plain tub from our discount grocery store (Aldi) and it is around $1.50 or so - that lasts us around a month. Then add the purees in and we're good to go.

Right now, there's a great banana pancake recipe on this blog [blogspot.com] - and some other great pancake (and various) recipes. Here's a pancake recipe that uses leftover oatmeal [blogspot.com] - YUMMMYYYYY!! I can personally recommend almost every recipe in this blog - we've made most or been the beneficiary of a shared meal of most of the things on this blog.

Frozen fruit - oh yes.... do it! Cantaloupe, watermelon, grapes - these are my kids' favorite treats when frozen. I like them when frozen, but the texture is funny to me when they start to thaw (for the grapes especially). But my kids love it as a frozen treat. Watermelon does get watery as it thaws - but these things are good if used in smoothies or eaten when still frozen. Peaches and nectarines are good too. I haven't tried kiwi or plums yet. Banana's are great frozen (if you freeze them with the peel on, it will turn a dark brown/black - but it's still yummy inside), but they do get very mushy when defrosting (which is great if you want to make banana bread with them and don't want to mash 'em - just defrost and squeeze out of the peel!) MMM... now I"m thinking about frozen bananas... you could cut 'em in half, slip a popsicle stick in, freeze, then take out and unpeel for a nifty frozen treat (made even better if dipped in some melted chocolate and sprinkles/nuts...)

Unlike mine, hopefully she will at least grow out of hers and it won't get worse. I will have to have her tested again each year for it to see if she still has it. Kind of limits our fruit selection! DD also LOVES mangoes and I have frozen these in the same manner that I do strawberries.

Have not tried the yogurt 'popsicles' but boy oh boy those yoplait whips are superb frozen!

Freezer Jam recipe: it's on of those that's kind of 'passed down' so here goes....

4 lbs. strawberries
2 C. sugar
1-2 tablespoons lemon juice

Cut up strawberries, place in large saucepan with sugar and lemon juice. Heat to rolling boil, let boil for at least 5-10 min. then let simmer for another 30-45 min. or so on low heat.

There are some recipes on allrecipes.com that are very similar but call for more sugar - like 4 cups or so OMG I think that would be waaaaaaay too sweet! Big key I've found is to make sure you are stirring a lot up until after you're done boiling because I have had batches that burned on the bottom. This makes me around 5-6 cups of jam usually.

Regular non-stick with a splash of oil. Seasoned Cast Iron would be better but DH took them camping, it rained, then he left the tent and supplies in truck for a couple weeks and everything was covered in mildew or rust. He was so disgusted he threw it all out before I got a chance to try to salvage any of it. Needless to say he was in the dog house over that for a while.

Hmm... depends what's clean... *lol* Usually, though, when I'm doing pancakes I am also doing bacon or sausage - so that goes in my cast iron cuz it's the biggest skillet I have. I have a "non-stick" griddle type skillet that I hate, but it's squared and does 4 decent sized pancakes at a time, so I use that a lot when I'm doing pancakes. I guess I just need to invest in some more cast iron!

OMG Oh my gosh, I would have beat him!

Rusty cast iron isn't hard to salvage. You can either sand blast it, or put it in the oven, and put the oven through a cleaning cycle.

The cast iron I use has been passed down in the family for several generations. It's OLD. The oldest pieces are probably 150 years old. It's still as good as new. You can tell the difference, though; it's a lot heavier than the newer stuff.

I have many sizes of skillets, pans, a dutch oven, griddles- you name it.

Food tastes best when it's cooked in cast iron. Big Grin

Thanks for the info - I am trying to dry them completely so I the won't be COMPLETELY smushy ... I would assume they keep the same flavor --- just the texture changes.

Your comment about beating him and the age of your pans reminds me of my childhood. Remember I grew up in the midwest here. My dad was/is a bit odd. He likes to re-enact various old times. Everything from cowboys & Indians, and nearly every war the US has participated in (including the war of 1812 who no one ever remembers and the Vietnam war many would like to forget)

Anyhoo... When I was in grade school he was going through a buck-skin re-enacting phase that involved dragging around a bunch of 16' tree limbs on the top of our car to various events so we could dress like fur-traders/pioneers and sleep in Tee-pees. It actually was quite a lot of fun as a kid. The group we were in weren't too serious about being authentic and most of us just dressed in our regular clothes and ran around playing games. Ofcourse the games we played considering the event were things like Tomahawk throwing, muzzleloader shooting and ...... drumroll.... CAST IRON PAN Throwing contests.

It was a bit like horseshoes in that whoever could get there pan to land closest to the target one. However it was claimed to have been started back in the pioneer days as a contest amongst women practicing there skills at throwing their cast iron skillets at there husbands.


You know thinking back its a bit scary what all the parents we letting us do. For pity sake I was 8 years old and throwing bone handle hunting knives and large tomahawks at tree trunks. Can you imagine the damage we could have done if one had accidentally flown backwards like my son does occasionally at the bowling alley with his bowling ball?

Not necessarily...google oral allergy syndrome. Here is a good link:

Also, sometimes people also have allergies to particular food raw but then when they are cooked they are no longer a problem because the proteins cook out. Not always the case.

As dd has gotten older I make sure she is ALWAYS in the cart when we go shopping, no getting out to walk....because at that age they want to touch everything and out of sheer curiousity she is particularly interested in bananas since we have never had them in our home. She almost lost her mommy to this when she was 6 mos. old so we don't take any chances!
