Why in the world do you want to completely empty your entire freezer and manually defrost it for a few days at least once a year?
Freezer burn happens when you don't properly package the food for long term freezing.
If you want long term frozen stuff to last, try a food saver vacuum packer. I have had meats last a year properly packed.

This Hisense uses a different method they call No Frost. When you shut the door, it rapidly circulates the air and I think they have a built in dryer to remove moisture. I've tested this with the ol' bare ice cube trick. In my r/f, the ice cube melts and refreezes within a day. In the Hisense, it's still a solid cube sitting on the wire shelf after weeks.

I've only defrosted it one time because the drain froze.
We use a vacuum sealer to package fresh and precooked meat
The vacuum sealer is the best companion to extended storage. We cook 10-20lbs of ground beef on the flattop grill and then package it in 1lb vacuum sealer bags (accounting for the weight change caused by cooking).
Once the ground meat is in the bag and sealed, I use a roller to gently squeeze the meat as flat as I can get it in the sealer bags. This makes thawing 1lb of precooked ground beef as simple as running lukewarm tap water over it for under 3 minutes.
The sealer bags I get have hashes along the edge and we found six of these hashes is the right size for us.
Then I stack them up on a flat piece of cardboard to prevent the bottom most bag from shaping to the freezer shelf.
This has been fantastic for us and the upright freezer is perfect for our cooking process.

The "out of air" brand on Amazon. They've been reliable up until this point and 100' feet lasts a while. A 10 lb tube of ground beef basically consumes ~10 feet of bags.
I've ordered this 3 times according to Amazon.
