in store they have a different sleeping pikachu So I'm assuming there's just warehouses full of these old plushies

Same, we bought the old style sleeping pikachu a few years back at regular price. We like it better than the new one. Kids use the old one like it's a pillow sometimes since it lays flat which is nice.
