I dont think the switches are scalping that well. Its about $150-$200.

Switch 2 with Mario $500
7% tax = 35
15% Ebay fees = $75
shipping +ins = $25

So like $65 profit, if you can sell for $700 shipped.

I mean its money, but doesnt seem like its worth the effort and scam risk.

If you can find a 5070ti at that price, you need to share that link. I haven't seen one for less than $900. And the Radeon is pretty well matched. For the money, I would rather go 9070 XT.
