Sharp enough to hurt themselves. Not sharp enough to make paper thin slices of tomatoes, but sharp enough to cut a carrot. If that gives any ideas

I did make the mistake of running this through my knife sharpener and it got razor sharp super fast. Had to dull it back down before the wife beat me up.

For the youngest kids learning to use a kitchen knife, a 3" - 4" paring knife would be a good start. The short blade can be used for basic slicing and it's not an intimidating size. This is a good one for as low as $8 depending on color. https://www.amazon.com/Victorinox...de
For older kids, maybe 7+, Victorinox makes a 6" Chef's knife. No bolster means easy to sharpen. Smaller size is more nimble and less intimidating than an 8" or larger chef's knife. Fits smaller hands really well, and this makes a nice petty knife for times when a larger chef's knife is overkill. My oldest kid and wife prefer this knife over all others in the kitchen.
