A little more expensive but if you are serious about having your little one learn how to cook (I teach cooking class with all ranges starting from kindergarten) I would highly recommend this one below. Red is cheapest and comes with a finger guard and peeler. The slot for their finger on both the knife and peeler helps a lot!!

Sharp enough to hurt themselves. Not sharp enough to make paper thin slices of tomatoes, but sharp enough to cut a carrot. If that gives any ideas Smilie

I have two of these 1 for each of my older kids. They love them. They aren't incredibly sharp however, if you use the sheath that comes with it as proposed by the company (as a protective barrier) your kids should be able to keep all of their fingers and help you chop up fruits, veggies, etc.

This is perfect for my 4 year old. Cuts most veggies and one step sharper then the plastic ones he had when he was 3. The key is to train good habits with knives.

I did make the mistake of running this through my knife sharpener and it got razor sharp super fast. Had to dull it back down before the wife beat me up.

Highly recommend this Opinel. I started using it when my kid was 5 or so and ready for something beyond the plastic knives. It was the right size to learn great technique and was sharp enough to do actual prep. He's since moved on to a 6" chef knife, but this was a great tool.

I don't like that the finger guard appears to be a bolster that extends beyond the blade itself. This is going to make it very difficult to teach a rocking chop, as things closer to the heel of the blade will not cut completely.

For the youngest kids learning to use a kitchen knife, a 3" - 4" paring knife would be a good start. The short blade can be used for basic slicing and it's not an intimidating size. This is a good one for as low as $8 depending on color. https://www.amazon.com/Victorinox...den&sr=1-2

For older kids, maybe 7+, Victorinox makes a 6" Chef's knife. No bolster means easy to sharpen. Smaller size is more nimble and less intimidating than an 8" or larger chef's knife. Fits smaller hands really well, and this makes a nice petty knife for times when a larger chef's knife is overkill. My oldest kid and wife prefer this knife over all others in the kitchen.
