It's not all about raw speed. Wifi6 vs 5:

That said, I have had great speed and reliability using a 4 node AX4200 refurb I got from Amazon last year. I am connected to an AT&T fiber gateway and have regularly been getting 750mbps on a 500mbps plan.
Coverage (4500ft²) has vastly improved vs. the AT&T BG320 router/modem. Running a guest network (IoT) and main network with roughly 40 clients.
I initially had some drops on my phone, but those were due to user error and have cleared up since adjusting the private DNS settings on my device.
I also really like that I can manage everything locally without installing an app or creating a cloud account. Huge win there.
This set would be fine for folks that just care about coverage and have a sub gig plan. $9 a node is a great price.

Took a couple of tries for the child to mesh up but it's been flawless since.

To answer your question one possible benefit would be additional channels/frequencies for people in dense areas. If you have 100 networks in range on 2.4 or 5 you may only have a couple using 6 as not many people/providers have adopted Wifi 6e/7 yet.
While wifi 5 has theoretically enough bandwidth for a gigabit connection, in real world speeds it may not be able to achieve those speeds when factoring in distance and obstructions.
Later wifi models will have better antenna technology and will be able to support more devices connected at once as well.
There are many benefits but this does seem like a good deal for some people.
