Pain is a small price to pay for great grip. Get a good pair of MTB shoes to go with. Practically stick like glue.

The Chester pedals have been available at a discounted price at REI for a long time. I would suggest opting for the Ride pedals instead. Both are made by Race Face, but the Ride pedals are designed to hurt your shins less. They are still super grippy too. Rides are rarely on sale, but they are currently eligible for the 20% anniversary coupon.

no, no, no.
fully plastic pedals like this are absolutely terrible. you are much more likely to slip off the pedal and injure yourself compared to pedals with metal pins. the amount of grip you get on your shoe is an order of magnitude less.

I switched from pin pedals to polycarbonate, but I do agree you are giving up a little grip. Unless you're riding very technical stuff I would go with polycarbonate pedals every time. I was skeptical too until I tried these Ride pedals. To each their own though.

I only ride flats in winter [SPD the rest of the year] and these are my goto fat biking pedals as the wide-open design does not collect snow like PNW etc
