If you choose the pro you get 2x 12.8v 280 ah batteries. 7.1 kWh instead of 5kwh

No. Most if not all 2 ton units are going to be 220 volts. This is only a 110 volt system. Second is that is does not provide enough watts. Third is that the batteries would only provide enough power for about 30 minutes of use.
Probably not - those usually draw closer to 2kW, which is beyond what the panels can provide. The initial surge would likely be beyond the inverter capacity as well.

You could *maybe* run a 1 ton unit with this set up on a sunny day

I don't think the charge controller cares how many batteries there are if they are all the same voltage? I think you are limited by the bms on the battery. I think you can go 4 in parallel. 8 total if jumping to 48v

It can't run one, but with right converter it can supplement wattage. That way it does not cost as much to run the A/C.
