Need new cell phone plan with just one line

Will be splintering off of a current Verizon family plan to my own plan with just the one line. Don't really care which provider as I am usually in areas with solid coverage.
Would like to upgrade from my current Samsung S22 to S25.
Can someone explain to me the benefit of buying my own phone 'unlocked' versus signing up with a provider and getting a 'free' phone that is locked? I'm thinking of Verizon, looks like I can get a 'free' S25 (via 36 months of bill credits). Was poking around their website and saw notifications about their phones being locked... I don't really have much knowledge of this as I've been on Verizon forever...
I also have an inactive S20 that I use to fly a DJI drone. Curious if there are any trade-in deals that would allow me to relinquish my S20 and then I can use the S22 for the drone...
Suggestions?
Edit to add - definitely not interested in iPhone but should I consider Google Pixel over Samsung? Anyone used both and care to share their opinions? I'm really just looking for general insights. Thanks!
