Plus, you can really go all-out on a eMTB still, nothing stops you. Will probably stop you from super-peaking out for HIIT, but you can definately push your HR hard.
You can ride it as a cheater bike, you can ride it for fun/super casually, you can just ride it because you are seriously oveweight and would never make it up some hills w/o it. These people would never compete with a zippy carbon XC bike like the OP, so, comparison is moot.
Riding bikes is fun, it is healthier than not riding them, and this of course includes eMTBs, which are not a menace on the trails and are nowhere as dangerous for other users of trails like eMotos/Surrons are, who try to squeeze their way into trails - threatening access for all 2-wheelers lately.

You get exercise on an e-bike, you just can go farther, faster and hills are much easier.

The real deal here is the Costco return policy. If you aren't happy, you can take it back, even if you ride it for 2 months. I found the group set to be cheap but worked pretty well. I didn't like the brakes. The tires were too light for heavy trail riding.

What model? I look and see stuff 2-3X the price.
Are those even available? That sale was last fall and looked like a closeout.
