The price of this drops from $400 to $320 once per month.

Not saying anything bad about it, just FYI this is a "normal" monthly sale price.
Man, it just blows my mind how much you can pack into a little thing for so cheap nowadays.

I need a new computer. Something to hold me over till I build something next year. Would this work to just surf the net. Do some work and watch videos and do basic video games?

Consider the minis forum refurbished or amazon renewed that have the oculink.

Yes.

I booted up my kids old laptops recently that they played Minecraft on just fine over 5 years ago. 4 and 6 gigs of ram.

I can't speak to your best option at this price point, but yes, it could do those tasks simultaneously (depending on your expectations for the gaming facet of course.)

Does this have the needed ports, or whatever it is, where you can add an external GPU dock thing?

I kind of want something simple that my kids can play Minecraft, Roblox and VR chat...mostly simple low graphics games. But would be nice to have the option to add video card later for more advanced games as well.

I would not bother with that. If you want to play modern video games you only need a modest gaming pc. Upgrade when you already.

You should really put the CPU model (AMD Ryzen 7 5825U) in the title so people know. This is an older, but capable CPU, but also you're fairly limited on expasion and stuff with this being used for a desktop PC. This is a really good unit for a 2.5GbE+ capable router though with the dual 2.5GbE LAN ports, and I would have preferred to buy this over my 5700U for around the same price about 16 months ago. However, again, as desktop, there's probably better options out there.

Yeah, it struck me as weird how out of the way they made it to figure out what processor was in the unit.

I'm typing this on the N150 which is a more basic model of this, and as far as browsing, there's no issue. I don't know what your standard is for "basic gaming" but I think mine would be somewhat lacking for online gaming. They don't even mention anything about the gaming in the description, whereas this one does. Not that it means anything, though. But at least this looks like it has a GPU.
Playing videos, mine has no issues and this would have none either.

I bought a more powerful BeeLink at the beginning of this year to replace an aging desktop and am amazed at how much is packed into such a tiny form factor. This seems like a decent find if you're looking for a mini computer.
