I got the Epix 2 non-Pro last year and I'm happy with it. I don't know what I'm missing out on.

The sapphire edition is definitely worth the extra money, since I'm constantly using the red light at night. I believe only the pro version has ski slope maps. It's a nice to have. I'm not sure if the non-pro can give you stats on slope runs.
