Having done this with a manual roller, I'm curious how well this would work. Personally I'd need it to go very slowly, ideally with a foot pedal to start and stop too.

fyi. A pasta roller and a pasta cutter are two separate things. wish they had an all-in-one design

Oh... so this is just a roller? I need a separate tool to cut it into linguini or fettuccine?

You can adjust the speed on the machine. I use mine all the time and have never had an issue with having to adjust the speed or stop it mid-pass through. Remember you have two free hands, since you're not cranking the machine with one. I can't imagine going back to a manual roller, never mind no roller at all.

Yes, but it's extremely easy to gently fold the sheet of rolled pasta and quickly cut into any size you want.

If you already have a manual roller, this isn't that much better. The cutter attachment is where the real benefit lies

Ordered one as I broke a cog in the one I had. It's a good idea to open it up and clean it out every so often.
