Is 500 degree water necessary for proper black tea or matcha?

I'd drink Japanese chemicals > American chemicals

Yeah but 200+ degrees daily can degrade the material over time even though it never hits 500 F. Imagine after a few years that Teflon starts breaking down unbeknownst to you. This is one of those things 20 years later, oops it does cause cancer after all.

I agree, teflon isn't ideal. I'd prefer stainless which then leeches nickle etc. The main concern is the manufacturing over the last several decades. Which has contaminated the air, water, and soil. This is why over 90% of Americans have Teflon related chemicals in their blood serum. I'd be more concerned with drinking or cooking with unfiltered water. Another concern is cooking in hot Teflon pans (fumes) or eating at restaurants or consuming processed foods, which use Teflon in stressful conditions, and rarely use filtered water.

It's actually one of those things that is already known if you just look at the actual studies, but will be hidden and ignored by media and the companies making money off it until 20 years from now when public knowledge of it grows to the point it can't be hidden anymore.

Sounds like you already know, so just putting it out there.

We are having problems with the new generation of Zojirushi. Their parts page has a bunch of stuff that they consider 'wear items' that we needed to replace regularly. Those parts have no warranty and can coat as much as whole devices from competitors.

Replace it in 10 years, 17.50 a year is under 2 dollars a month. Still a cost but you are buying convenience. If you wait till the 19th year it is almost nothing.

Can it be used for anything other than water? Like hot cocoa or apple cider?

I've had this model for many many years.. still as good as new. I run a cleaning cycle with descaling solution every 2-3 months but I'm not even sure it's necessary. The lid needs replacing every once in a while due to mineral build up and internal plastic crumbling into the water. They're not always in stock which can be annoying.

I've tried a bunch of cheaper brands on amazon. They seem to last a couple years at most before the electronic dispenser malfunctions or the internal tank rusts and springs a leak. The zoji is priced at a premium but it's outlasted the cheaper ones many times over.
Are you saying they sell the lid separately?
Mine just literally crumbled in my hand when the metal top came off on top of the bucket of water!!

Shows $215.07 for me now. You'd think it'd still be $175 or cheaper for Prime Day but I guess not.
Also, just wanted to add in input that I have this already and it's a great convenience, but was always deterred by the mineral build up and when you empty it out and wipe the inside you'll see a pinkish color on your paper towel/cloth.
Apparently you're supposed to use citric acid cleaner...didn't know about this / didn't think about it.

So just know that there's maintenance involved for the convenience. I now prefer and use my $20 electric kettle more, where I can just heat up the water I need and wait a couple minutes.
