You can sync multiple controllers to PC, even if they are the exact same type. Each one will appear as a unique controller in Control Panel. You'll just have to assign the controllers properly in the game you are playing. Steam handles them flawlessly, but you may need to select the controller manually in emulators and such.
Same as the Ultimate controllers, but slightly behind the Ultimate 2. Ultimate 2 uses TMR sticks, so they have better resolution (can detect finer movements) and lower power consumption.
The GameSir is nice because you can remove the face plate and swap the buttons around to mimic the Xbox layout (ABXY) or Nintendo layout (BAYX). The 8bitdo controllers don't and you have to buy the specific version for the layout you want.
Joystick: SN has Hall-effect vs U2 has TMR (more precise), both reduce eliminate drift but TMR is more precise
Buttons: U2 has L4/R4, SN doesn't
Support: SN supports Windows, IOS, Android (via BT), wired usb-c and Switch. U2 supports Windows, wired usb-c and Android (via BT)
Performance: U2 has better latency. Both have same polling.
Ergonomics: U2 has a slightly different shape, SN is closer to XBox controller.
