Do they make a small propane torch that can connect to a 20lb tank? I'm looking for something smaller/precise for lighting wood pellets in a pizza oven, but bigger than butane torch. I feel the torches for weeds commonly sold are too "broad"/big of a flame

Yes they do. For example search B0956WYSJQ at amazon for an example of a cheap one. It looks like one of the usual small torches, but a hose comes straight out the end of the handle with a 20lb propane tank connector at the end. I've used a good one from Turbotorch for 30 years; search the web for "Turbotorch LP-2 kit".

I use something like this on a regular basis to light up wood, charcoal or campfires during my camping trips...

FYI there were over 12,500 house arson cases in the U.S. in the last year where more than 3000 of those people burnt down houses using a lighter, so 1 propane torch fire is very insignificant in the grand scheme of things.

This style of torch is most often used for searing steaks and giving a nice crust to the meat, so it can also be used for browning anything else like the top of creme brulee or fried rice to slightly char the rice, but be careful not to burn the rice as it goes from brown to black in less than 1 second. It doesn't taste quite as good as real wok hei but it is fast and the next best option if you don't have a traditional wok setup with an extremely powerful burner. The reason it isn't quite as good is because this torch is a lot hotter which causes the rice grains to almost instantly blacken rather than brown. Browning is what you want because it causes the maillard reaction to occur which creates more complex and deeper flavors, whereas blackening just causes charring which causes bitterness. Since this torch makes the rice go from not brown to black in under 1 second, you have to be extremely careful to move the torch quickly back and forth over the rice to get just a little browning (wok hei) without blackening the rice and hurting the flavor. I can do it reliably now after some practice, but I've burnt some grains of rice before which gave it a slight bitter flavor which wasn't horrible, just not as good as if I did it correctly.
