So for using them with your phone. Do you need to stick that USB stick on your phone? Or can the headphones be paired with your phone?

Plus has a bit better noise cancelling, automatic wind mode, personalized sound (whatever that is) and includes audio cable + storage case.

Controls are touch on plus while button on SE (this deal).

headphones can be paired to your phone via bluetooth like regular. The dongle has more than one purpose, but probably the main purpose they bundle it is because the dongle supports aptx codecs which sennheiser bluetooth headphones use. And you can plug the dongle into your pc if your pc doesnt have bluetooth. Aptx codec, namely the aptx HD codec the accentum uses, is arguably better than the AAC and SBC codecs that phones normally default to. So you can plug the dongle to your phone, and get the aptx hd codec for higher quality sound than SBC or AAC.
