I spent the most time in 3, but 2 is my favorite from a story/gameplay perspective; 3 got very repetitive. But I still happily played on because the characters were good, the progression mechanics were solid/satisfying, and it was easy enough to not be annoying. 3 being open world helped a lot since I really like exploring and just driving around to see what happens.
I picked up the Definitive Edition of the original game, and it felt much smaller and more linear than the other two, which makes sense. I mostly say that for people who are new to the series: if you start the original and don't like it, you might still like 2 and/or 3.
