Is there some clear comparison between the two anywhere?

The Wireless version has the X-Box lay-out for buttons, whereas the Bluetooth version has Switch lay-out. The polling frequency on the Wireless is 1000 Mhz vs 250 Mhz on the Bluetooth version (Even when it is set to 2.4 mode and using the dongle). And for compatibility the Bluetooth works with Switch right out of the box for all inputs, while the Wireless one needs an update and may have some wonkiness to it with Switch, not guaranteed to be fully compatible.
I have an original Bluetooth Ultimate that I use for PC, but looking to upgrade to the Ultimate 2, and likely the Wireless, since it's for PC.
There is also the polling rate variation between the two, 1000 vs 250 Mhz, which can be somewhat significant as well if you play fast twitch based games.
The joysticks AND triggers are More sensitive than any official xbox controller I've ever used (3 Xbox series S controllers and 4 xbox 360 controllers).
I cannot say enough good things about it.

Only con: The handles aren't angled much, so it's not great for people with wider frames.
Though the physical built quality is nice for this controller, the internals are HORRIBLE! Constant disconnects, bluetooth issues (multiple computers) and sticky keys eventually.
Avoid this product like the plague. You've been warned.
