If you're confused about which Instant Pot to get, this is probably my top choice. Few include the Sous Vide mode anymore, but this one does.
It won't be as quick as a circulator, but you can achieve many of the same results with a little time and planning. I love it as a supplement to my primary sous vide (for that one person who likes it more well-done, second protein, etc).

Both my newer Instant Pots are failing after only a couple years of use. Endless error codes and issues. I'd tell anyone looking to avoid this brand altogether at this point.

That's a real bummer. I know the cool guy that started the brand sold it, but mine has been going strong for years.

I had an old 6qt workhorse that I gave to a friend when I got newer one with more features. Wish I had just hung onto the old one.

I recently got the IP 8qt Duo Pro. Feature-wise this one's very similar (and maybe simpler to use). I have a 6qt Duo (my first IP), and have enjoyed it, but the saute function doesn't work very well. Our new one is better. I don't have any of the problems mentioned by one-star reviewers of the Duo Plus listed here. I do think that the graduations inside the pot are getting degraded. I don't actually care about that. My old one has a shiny (as shiny as chrome) pot. Our new one has more of a brushed nickel look. I don't think they used the same quality steel in the newer thinner bowl. The only other issue is that the plastic steam vent cover falls out when washing, and sometimes when using the handy lid holders on the pot (that's clearly a design flaw). The steam vent was by far the worst part of the old IP design, and in many ways, too.

I am going to hang onto the old 6qt one- just in case.

I picked up a 6qt pro plus a couple of weeks ago after seeing several videos on making ribs while looking for new recipes. Considering the IP takes 30 min vs 4-12 hrs for my normal options (smoking, grilling, baking/broiling, etc.) I assumed that it would be a compromise in flavor and quality but it might be worth it given the time and effort savings, so figured I would try it.

I got a good deal on the Pro Plus, which includes wifi that is ACTUALLY useful. I can search recipes on the app while somewhere else, and it has step by step guides, and when you get to the step to cook with the IP, it will load all of the settings for you. It will also send you notifications when the IP is transitioning (eg preheating to cooking to venting), and the notifications are especially useful for natural venting wwhich can take anywhere from 10 min to 40 min (and there isn't a timer which is pretty lame, you just know that it is venting).

I have only made 1 rack of ribs, and took my time to learn the IP, so it took like 2 hrs over all, but the ribs were AWESOME. Fall off the bone tender (like really, every rib fell apart picking it up), the flavor was fantastic, and the actual cooking part took 45 min total for the preheating, cooking, and venting.

I also used it to make corn on the cob (only took 3 min!! well preheat time plus 3 min), and the corn was excellent!

I should have gotten one of these long ago, but glad I finally did.

I ordered one, I'm going to also be returning this pot.
They sent me the wrong instant pot, the duo 6-in-one, without the sous vide feature I was looking for.
