Objectively quite a good deal but feel like this $1050 list price is a little inflated…? This is last year's model and would usually go for $700 base price, +$100 for more storage + $150 for cellular = $950, no?

According to the May 2024 press release (see Pricing and Availability at bottom), the 13-inch iPad Air M2 128GB cellular model starts at $949. Not according to the original release notes. 13" iPad air WiFi + LTE started at $950 for the 128gb model. Assume $100 more for double storage puts if at $1050.
I bought the 128gb wifi model in Oct 2024 for $699 ($100) off msrp. This is double the storage plus 5g added. Is it worth minus 1 year of useage? Maybe. I see the 1tb version without 5g for $799. I think I'd rather have it. I have a strong wifi at home and decent Hotspot on my phone.

Laptops and desktops will always be generally a superior/better deal when compared to tablets & phones (unless you have a clearly articulated need requiring those limited devices).

That too -- but you simply get a full-featured operating system that can do pretty much anything.
But tablets? It's a mobile phone OS that's just upscaled with a few extra features. You can easily hit a wall with even the most mundane workflows with a tablet... or need to entertain a convoluted process that takes you many extra steps resulting in plenty of wasted time. All to do something that is a 10 second normal operation on a Mac/PC/Linux machine...or could even be scripted/automated.
If simply buying an expensive keyboard could avoid all those issues, I'd be on-board with that. But it doesn't. And that's just the bad icing on a pretty awful cake....paying top dollar for a keyboard that can ONLY be used on that specific tablet.
If you have a specialized use case, then tablets can be pretty awesome. But they're not a drop in replacement. Never have, never will.
