Currently gaming on a rtx 3070 and an amd 3900x. I'm only playing at 1440p. This seems like a good value?

5070 would be a very big jump in performance, even at 1440p. For most titles, you shouldn't get CPU bottlenecked, but there will be some titles where you "might," but even then, it should be negligible. I'd say go for it if you don't plan on spending more cheddar down the road on a 5080 or higher. Instead, take this one and save some money toward a better mobo/cpu later down the road IF you feel like you need better performance.

One last thing to consider is power supply requirements. Recommended for 5070 is at 650 watt power supply. Pretty sure it was the same for the 3070 so you "should" be fine, but do your own verification to make sure.

People keep saying this as if the Supers aren't going to be overpriced like the regular 50 series was until recently. Lol

I have this exact GPU in one of my ITX/mATX builds, and it's been fantastic. In Hogwarts Legacy, it handles 4K Ultra with DLSS Quality at a steady 60 FPS without any issues. Street Fighter 6 at 4K on the highest settings also runs flawlessly. Overall, it's a very capable 4K card for 60 FPS gaming.
For context, this build sits in my living room and is connected to a 4K TV for my kids to play and enjoy. Since the display is capped at 60 Hz, I don't push it beyond 60 FPS—and for that purpose, it performs perfectly.
