So a nominal 2000W/3hp and 32mph on throttle means this can't be a bike. Most moped laws are limited to 30mph so it is either a motorcycle or not street legal.
In California, Kentucky, Indiana, New York, New Jersey, Missouri,& Michigan it is a motorized vehicle that requires registration, plates, driver's license, etc. This is assuming it has a VIN and even can be registered. I doubt Amyet is a certified motocrcycle dealer.
So if you are someone that local police might give a second glance, this device exposes you to a lot of risk for operating an unregistered/uninsured/etc/etc vehicle.
I think it intentionally blurs the line on usage by adding things like turn signals, which are only applicable in traffic, where this isn't legal in any state I have bothered to check. I think not having a horn/bell is a sign of the manufacturer's disregard for others as that would be a useful feature when your 3hp+ vehicle overtakes a manual cyclist in any scenario.
I think is if it was properly documented as a motorcycle with a VIN number, it would be an awesome deal, but it doesn't have a VIN and is not a street-legal motorcycle so I think it is a raw deal. And I suspect with $<700 parts, it is at best a semi-disposable beater and more likely a danger to an off-road trail rider as I doubt the brakes & suspension will deal with that weight at that speed or that the electrical connections will survive, but that's based on common pricing norms.
I think it is likely to result in completely avoidable issues, from rider injuries, to bystander injuries to legal and financial consequences in most use cases.
As to why I bother, I had a couple friends friend who got "there's no law against it" gas-powered mopeds way back in the 1900s. One of them got theirs up to top speed, crashed, got brain damage. There was a helmet law for motorcycles, but this wasn't a motorcycle so his parents didn't get him a helmet.
Then there were laws setting limits on mopeds and requiring helmets.
One of the other kids in our school had more or less the same moped, was mostly considered a "goody two-shoes" by other kids but he "wasn't our kind", so he got the book thrown at him "as an example" because "you can't have a law without prosecuting someone, amiright?"
We are now in that land between "hey, didja hear about that new law they passed after that kid got hurt?" And "let's make an example of somebody."
My posts are for the people who don't know this isn't legal to use the way the advertisement shows and are likely to be the ones made an example.
If you are only going to use it on private land and motor-friendly trails, enjoy! This might be a good deal. Probably not, though, because I doubt a $700 thing has the components (brakes, suspension, pedals, saddle, etc) to do that either very well or for very long so prepare for disappointment.

Does the throttle (not pedal assist) have kind of a "soft start" that I've seen on a lot of bikes or does it give you full power from a dead stop?
This was my first ebike so don't have what to compare it to. I can put it this way, if the passenger behind me isn't ready or have their arms around me, they would likely fall off the back. It gives a pretty nice kick at the start.

i dont think it has room for another passenger, unless you're too small
I'm 5'8" and have been giving my kids ages 4-12 rides on it. Not a lot of room but it can accommodate 2 people if they are on the smaller size.

regardless of the power, no one will look at this and think it is a motorcycle or moped..
The round motorcycle-style headlight, triple-tree fork and pseudo-gastank is a fantastic sign that this thing wants people to think it is a motorcycle.
