You lose the anti-reflective screen coating.
You lose the dual front cameras.
The battery is rated for only 1200 cycles instead of the S10U's 2000 cycles (but real world performance can't be fully tested yet).
You lose haptic feedback. The S11U does not have a vibration sensor.
With the S11 Ultra you gain: a brighter screen, a redesigned S-pen (some like it better for drawing), and a slightly thinner profile. The new processor and GPU will also play games and render videos faster.

Also is it me or there is no built in kickstand on the tablet alone. I often don't use the keyboard just the tablet alone with kickstand.
I thought the 14.6 would be much wider, but due to the 16:10 aspect ratio, it's about the same width as the IPad pro. The extra height isn't terribly useful for sheet music.
If you do go with an Android tab for sheet music, I highly recommend the Mobilesheets app. It's a one-time purchase and works well. Good luck!
