10" is about the sweet spot for these for most people. 8 in is too small to do much in besides maybe fry two or three eggs maximum. 12 in is huge and heavy and you'll never find the right place to store it unless you cook pretty regularly

Wash the pan thoroughly and dry it
Pour some avocado oil into the pan and wipe it all around, up and down. No excess.
Preheat the oven to 400 or so degrees.
Place a piece of aluminum foil on the lower rack and turn the pan upside down on the top rack over the aluminum foil.
Bake it for an hour, turn off the oven and let it sit in there until cooled. Done.
Make sure the 2 racks are about the same distance from each other.
This works for just about any pan. It is tougher with the taller 8qt dutch ovens I would guess but all my dutch ovens are enameled.
Now if you use it properly it won't require any seasoning again. If you run it too hot and it gets some burned on areas or gets sticky, there are some products that will strip it down and you can re-season it.
