Although I know you can just get your own SSD. It bothers me that this was made with the intent to get your own SSD. Cause why would someone think of making something that would be used to the extent of 48GB of ram, and then say 512GB is enough storage as a finished product. Imagine I sold you the best camera with 8K capabilities, and said you can only store 512GB storage on it. And mark it as a pro

It's what made Apple a multi-billion dollar corporation. There's a get in the door price and a optimal use price and if you make the incremental gap within reason, it's a lot easier to justify spending more.

May I ask you how the apple refurbs are newer than these ones when the apple laptops could be months or even more than a year old?

Apple tests them more stringently than machines right off the line as it's 1:1 on refurbs vs spot checks at random as they come off the line. They also replace most user accessible parts like cases, keyboards, batteries, etc if they're not in tiptop condition and include the full warranty that a new product would.
