How does the ceramic compare to their regular non-stick pans in terms of "non-stickiness"?

Yes. Get stainless steel/cast iron and keep 1 nonstick pan for eggs.

FWIW, there are people who also claim stainless and especially cast iron are dangerous in their own right. Stainless because of "leeching" and cast iron, if not cared for properly, can lead to all sorts of potential problems. And yes, most people do not care for cast iron well enough.

NOTE: I am not saying which is better, worse, same, or whatever....just the answer isn't as cut and dry as you are making it out to be. Especially if you are not an actually expert in the field...which I am assuming you aren't or you would have mentioned your degree in metallurgy as it relates to food safety.

And wait until you find out that you can fry an egg on cast iron or even on stainless

I've got these. They're OK, you're basically buying for price.
I have other Tfal pans from Costco that are better IMO. Even though they are both ceramic the handles are not plastic and the bottoms are flat without ridges.
Both do the job, but this set I don't like as much. I don't expect them to hold up as long but that's conjecture at this point.

Much worse.
In addition, you can season an iron pan to make it non-stick. Even with a stainless steel pan, meat sticks to it initially eventually comes off after it's sufficiently seared.
None of these tricks work with a ceramic pan. It's a constantly sticky piece of trash.
