I essentially did that with a Dell refurb I found that had 64gb and a 2tb drive for around $600. The cpu is a bit meh but overall capable.

FWIW, I've bought 4 Acer Chromebook Plus refurbs and a couple Windows laptops and they've all shown up in practically new condition. We had no issues and all are being used daily. I'm typing on one of them now. I bought a windows laptop from them and I did have to reinstall windows when it arrived to make some strange issues go away, but it's been perfect since.
