Wusthof Classic knives are framed as durable, high performing German chef knives that excel at everyday prep and hold an edge well over years of use. The 8 inch chef knife and paring knife are described as a solid, premium set, with praise for cutting feel, balance, and long term reliability. The full bolster draws the main caveat, since it can make sharpening and maintaining the edge more awkward for home cooks, even though others have no trouble with it. A strong pick if you want a classic workhorse and can live with the bolster.

  • The knives can hold up for many years with honing instead of frequent sharpening.

  • The full bolster design can reduce the chance of cutting fingers during prep work.

  • The 8-inch chef knife can maintain its edge better than cheaper knives previously used.

  • The set can be sharpened using a Chef's Choice electric sharpener without reported problems.

  • A full bolster can get in the way when sharpening, which can be a drawback at this price point.

  • A full-bolster Wüsthof Classic can be harder to sharpen at home and may require extra bolster maintenance.

  • Sharpening can make the knife look increasingly worse over time.

  • The bolster can affect grip and cutting technique, and it may not meaningfully improve safety in practice.

I have to agree with others on this. As a home cook it is definitely harder to sharpen my knives with a full bolster. You can't discount the extra work it takes to maintain the bolster after sharpening. Not everyone has a belt grinder just laying around to do this, and paying a professional to grind the bolster is not ideal. I rather not have a bolster and be able to sharpen at home with just a whetstone and strop.
Byerly's and Lunds Grocery stores will sharpen three knives at a time complimentary. My 10" version of this is now 25 years old and I have only honed it, never sharpened. After daily use as my primary driver, I am finally thinking about sharpening it although it is still way better than many brand-new knives, including the Cuisinart set I bought for my father and had to bring all the unused knives in for sharpening.

Love the 8" chef knife my wife got me for Christmas. Seems to maintain its edge better than the cheap crap I had before and have no issues sharpening.

I have a Henckel's 8" chef knife that is very similar to the Wusthoff, but there are a lot of less expensive options nowadays on Amazon. Here's a chef knife comparison on youtube that seems to conclude you don't need to spend nearly as much. Interestingly he didn't include Victorinox in the comparison, but it's worth a watch. https://www.amazon.com/dp/B0B1T6M...k_detail_2

If you're looking for a cheaper but high quality workhorse of a chef knife you can't go wrong with Dexter-Russell. I love this knife. https://www.amazon.com/Dexter-Rus...ref=sr_1_1
Thanks for the recommendations. But your first link leads to a Japanese knife on Amazon, no the chef knife comparison on YouTube.

You're right, it's not the knife the dude recommended just the same brand/company "Shan Zu", he recommends the $69 Shan Zu Damascus chef knife https://www.amazon.com/Damascus-S...ome-garden I just thought the $19 seemed like a good price. What I should have said going off what this "influencer" knife expert said is:

Japanese "style" chef knives made with high quality Chinese steel (to mimic "VG10 Japanese steel), are becoming more popular than the traditional German brands simply because of bang for the buck. Many of these knives seem to be comparable to the classic German brands. I love my Zwilling "Four Stars" 8" chef knife, but I paid $40 on sale, I wouldn't have paid more. Just search "Japanese Chef Knives". It's actually pretty amazing what you can buy under $30, but if you want to spend even less, there are plenty of really good knives under $20, Mercer, Cuisinart, Martha Stewart, KitchenAid, all good in my opinion. For example, I have the Martha Stewart "Carverton" chef knife and it's amazingly close to the Zwilling.

That knife sharpening expert in the youtube video praised the $28 "Babish" (real name Andrew Rea) as well. I have no doubt that's a good knife. Mr. Rea has a whole line of quality kitchen products because his entire reputation is at stake with his branded stuff.

One last comment on this post. Not threadcrapping, I like German knives, but If you need a larger "10" chef knife, I found this Dexter-Russell "Sani-Safe" for sale at $22.05. https://www.amazon.com/dp/B00AO945CQ I reccomend it becuase I used this specific knife daily in my restaurant and it was my favorite. I liked it so much I bought one for home.

When buying Dexter-Russell, "Sani-Safe" and "DexSteel" are the key words to look for. Sani-Safe is the industry standard in commercial kitchen knives, and DexSteel is their US made steel. I personally wouldn't buy the imported "Basics" they sell. They're probably good too, but not sourced and made in the U.S. like the Sani-Safe line. For those that didn't know, Dexter-Russell dates back to 1818. Yes, you can still buy quality products proudly made in the USA.

These are outstanding knives. They frequently win rankings by experts and for very good reason. Out of my many high quality knives, these are my favorite to use. And this is a good price for them. Just add a cheap serrated 10" long bread knife and you have everything you need for life! (Also, spend a few minutes watching youtube videos on honing vs sharpening, and learn how to do it right.)

Are there reports of anyone getting fakes from Amazon on these? Also, anyone use the Wusthof Ikon Hand-Held Knife Sharpener before?

Interesting article stating that Wusthof and Bose indeed had to restrict fulfillment through Amazon because of fakes:

https://www.geekwire.com/2025/aft...g-loathed/

  • Quality German knives like Wusthof need less sharpening than most home users think.

My commercial customers, who employ careless workers and who's knives are used 16 hours a day, get bi-weekly sharpenings.

Home users, who are much more careful and use their knives a few minutes a day, can often get by with sharpening once or twice a year.

You will end up doing way more Honing, rather than sharpening.

No knife is Truly BIFL. If you actually sharpen your knives they will eventually run out of material.

Decent knives but at this price point full bolster is a negative as it can get in the way when sharpening
True, and it is more than just sharpening. It affects the way you hold and use the knife for cutting and even other work - e.g. removing the seed from an avocado; pushing the knife through forward in some situations. The bolster just limits a number of things. As for safety...blocking just the back of the knife when there is a whole 8" of sharp knife for you to cut yourself is just plain silly. You do have to learn to hold and use a knife properly. Bolster = no, no.
