Any recommendation for a buy it for life non-stick that isn't using Teflon or other coating?
I have a set of stainless but eggs and noodles are a hit and miss so I need a simple healthy non-stick
No. Teflon has a limited life. No way around it. Nor any better alternative that I know of.

Are you getting the pan hot enough before putting the egg in it? If so, thats disappointing for pans of this cost.
There's nothing disappointing about these. Stainless pans (and any pan really) are just another cooking tool. And they're the wrong tool for eggs. If you can cook eggs.without sticking on stainless or cast iron without using a pool of oil then more power to you.

You shouldn't need a pool of oil to make those eggs. Ledenfrost method isn't the right solution despite it's popularity. It's a little bit of oil spread around until it starts to get warm then a 1/2 pad of butter. When the butter is melted and foaming, make sure it's spread across the whole surface of the pan. Your over easy eggs should be just fine.
I've been cooking my over easy eggs on cast iron for 10 years. When I'm done, there isn't even enough oil leftover to make my toast.

This! I kept having issues with my eggs sticking until I decided to one day turn down the heat. Social media pushing the Leidenfrost method wasn't helpful. This looks like the same set at costco btw for the same price
