I ended up going with then River 3 Plus w 45 Watt Solar Panel combo for $189 after discount. The River 3 Plus can be used as a proper UPS since it has <10ms cutover time. The 3 Plus has a modest ~16% capacity increase (245Wh for 3, 286Wh for 3 Plus), but can output double the power (300W/600W boost for 3, 600W/1200W boost for 3 Plus). The 3 Plus comes with a 5000mAh portable powerbank. I feel like the 3 Plus is more future-proof since it can be expanded via add-on batteries - up to an additional 572Wh for a total of 858Wh. Overall, $54 to upgrade to the River 3 Plus seems like a good deal. You probably don't need the solar panel, but the ability to add capacity in the future, the ability to use it as a true UPS, the extra power bank, and the extra power output is worth it IMO.
I feel like EcoFlow makes it a bit hard to compare the different models, they don't really do comparisons with their own models and they do screwy things with the numbers. For instance, they have a comparison of a 1000VA UPS, the River 3 and the River 3 Plus, and for the UPS and 3 Plus, they use a 600W computer for the computer runtime benchmark, but for the 3 they use a 300W computer. I think it's because other models like the River 2 Pro which has a lot higher capacity is 2x the price, and is better in a lot of ways, but has a <30ms power switch-over time which means that you shouldn't use it as a UPS. I think that they want you to really dig if you want to compare the different models.

River 3 Plus is 600W continuous output versus 300W for the River 3.

IMO 600W opens up a lot more options for powering devices so unless you have a particular use case in mind that is <300W I'd recommend spending the extra $55 for the plus.

It is what I need, but I guess that was the point of my question. I had read that some people do use it in place of a UPS. In fact, there is someone in this very thread who suggested the River 3 Plus makes a better UPS, since it is <10ms switchover. For me, switchover wouldn't matter, since I could tolerate the network going down for a second or two.
Edit: I did find an official response by EcoFlow. It looks like the unit they officially designed for UPS needs is the River 3 Plus.

I've found that AI is very good at building side-by-side comparisons between two models of these, even from different manufacturers. It shows me the specs and explains which one is better and why.

If I were to use this as a Network UPS, would it suite my needs? I plan to power a 5-port switch, POE security NVR w/ 4 cameras, a wireless router, and Modem.

Unless I am dumb it appears the RIVER 3 (nor Pro) does not support USB C charging (without adapter cables, and then there are still caveats). I have a River 2 and USB C is my default charging method and IMO is so common that it seems inexcusable for a device such as this to omit the most common household LV power delivery method.
