Any thoughts on the value of malwarebytes premium vs free? And how hard is it to go back to free after you've had premium, will you get more ads than ever trying to get you to upgrade?

Consumer antivirus products are just security theater. Don't waste your money. They don't do anything beyond what Windows Defender does. A lot are just different UIs for Windows Defender.

Are there any decent write-ups on this? I don't doubt it, just want to learn about how it all works outside the Enterprise.

Sounds like he hasn't used the product. Bit defender has pointed out certificate and website issues that the browser nor the OS picked up. It also found a package that has malware that it missed.
Windows is good for most stuff, but it's not sufficient and adding bit defender increases your defense in depth on the most likely devices on your network to get exploited.
As to your question, enterprises don't only stick with windows built in AV and they have harder controls across the environment already. Why wouldn't you?

I was looking for an AV post on SD every day for the last 4+ months and nothing... And got this not checking for a few days:
