In need a monitor for my esxi host but I don't have any usbc ports on the server. Will this work over the usb 3 (blue color) port?

No but if you have HDMI you can use the HDMI connection .

These are pretty handy. I plugged one into my security system, so I can tuck the whole thing into a corner.
Also another one is always connected to my 5000-game retro device, so I can game anywhere - porch, kitchen, living room while wife watches tv.
