It's not necessarily a gimmick. This type of sugar is not supposed to be run through char like normal sugar can be. Char is not kosher or vegan. So this makes it consumable to Vegans and those following Kosher diets.

Costco (Kirkland) 10 lb organic sugar is $13.99. My local store plain sugar is $12.48. Maybe cheaper somewhere else, but they don't deliver to my door at no cost. I don't even care about organic or not, I need my sugar for the hummingbirds! In for 1, thanks OP!

It's an organic product similar to any other certified organic grocery item that are generally more expensive that the regular counterpart. Not sure why you consider this product a gimmick specifically.
