You can use them for anything really. Used 2 to make a van build, could also get this with an alt charger and set up few 12v items in a smaller truck build but the all in one batteries like Jackery are getting cheaper as well so those are more portable. But if you put a couple of these together, that's some decent ah for something offgrid. not sure how well it translates to saving on energy bill at home with your own solar. Thats probably when you step it up to full home battery systems.

Yes-- assuming you mean gas tankless. This is my exact use case. My gas tankless uses about 100w max, <10w while idle. Battery is connected through the XT60i port of an Anker power station. So at 2 hours of hot water per day, the 3584 Wh battery provides 10+ days backup.
The tankless water heater is great overall, except for the instant loss of hot water when the power goes out!

For electronics or an electric trolling motor, yes, it would be great. Almost none of these lithium batteries that you see are meant to start your motor. They don't have the amps for it. Don't hook them up to your motor either to charge from the alternator as they will fry your alternator by drawing way more current than it can put out. It's possible to charge them from the alternator but you would need to install a DC to DC charger to limit the current draw by the battery.
