Just sharing my workflow incase it is useful.. I use a J.K.Adams Cherry end grain cutting board which has been a workhorse for 5+ years now.. its quite expensive but a BIFL buy IMO. I like that the board is so thick that I can just scrape the cut veggies on to rectangular containers set alongside them with out having to lift the board at all.
For meats, I don't venture into any complex cuts and its usually boneless chicken or Salmon and I stick to my Wusthof Come-Apart Kitchen Shears and a pyrex bowl. Both get as good as new after running them through the dishwasher after use..
I have some of these and dislike them because the have nubs in corners which keep it from sitting flat against your counter. The result is that they bend creating a gap between your knife blade and the cutting board. Which means you don't get a clean cut. Hopefully that makes sense.
