need something portable to move around a warehouse to ship, print labels. Pretty bare bones, but the processor needs to be intel, do I need anymore than this?

I've had two Dell Latitude laptops for work at a large enterprise for the last four years. Both have had issues. My current model has been freezing and completely crashing at random. I'd opt for something else based on my experience.

I would prob look for a refurbished thinkpad in this price range, T14 is pretty durable. And old X1 Yoga would work too if you want smaller and lighter.

Try running memtest. I had similar issues, random freezes, reboots. One of the ram sticks was bad. Swapped it out, no more issues.

Since you didn't say 'but it was great after they replaced the bad hdd or the bad ram' that sounds like it was a software issue.
