Only thing I do different is I just use two whole eggs. Too lazy to separate them and the ice cream seems fine.
One other thing I forgot. I only use one tsp of vanilla or none at all depending on the flavor I'm making. For example I use no vanilla if I'm making chocolate.

It makes good ice cream. You just have to find a recipe that works for you. I found a sugar free recipe on YouTube that I use for a base and add things if I want to make something like mint or strawberry.

Xanthan gum can create a slimy, snotty, or gummy texture if used in excess, as it is a powerful thickening agent. Using too much, typically more than \(\frac{1}{4}\) to \(\frac{1}{2}\) teaspoon per cup of liquid or quart of ice cream base, often causes this undesirable mouthfeel.
