Knife guy here...yea price is a little high. Seki is a legit knife making region though. I prefer Sakai. Its a beautiful hammered knife. VG10 is great, most people don't want to deal with rusting shiro or aogami anyways. Very nice looking knife either way. I would say worth it only if you know the knife maker is upper to top tier. Otherwise, check other outlets. One canadian online store currently has their semi-annual sale going on now.
I have been using Japanese knives and Western-style knives for decades. Then I switched to Chinese cleavers. I'm not going back to Japanese or Western knives. Once you learn the proper technique of the Chinese cleaver, you really only need 2 for the entire kitchen. Vegetable and bone cleaver; well, maybe a tiny knife for your fruit or steak.

holy ripoff of latter day saints..... vg10 is stamped out of rolled sheets; like a cookie cutter. not what you want for $300 per knife.
Many of the better mono-steels use the same sintered powder metallurgy process, which results in a forged flat sheet of the final metal. But VG10 and "damascus" is a performance contradiction and really only serves for cosmetics. VG10 is a semi-stainless, fairly tough and durable steel but only medium hardness of 58-61 (for kitchen knives) which can serve perfectly well as a mini blade on its own. Think of it as one step above Solingen steel. At this price, it behoves having a harder carbon steel in the center which can take a thinner profile and apex.

It's not that they don't have good products but there's...a lot of silly ones.
