Not to sound like my Mom, but I'd recommend against Gray kayaks in favor of more brightly colored kayaks that can be seen more easily by boats.

In open water, yes, you want a high vis kayak.
But FYI this is a fishing kayak, most all of them are dull colors because they're better for sneaking up on fish/wildlife. If you want to be safe you can wear hi vis life vests and a safety flag/light to be easily seen by humans.

Most are of the opinion that boat color is not a factor that affects fishing. Anecdotal but I've been fly fishing with an orange/black Nucanoe and do just as well as any other color boat in the party.

Anyone who knows about these types of kayaks have an idea if how stable they actually are. I am used to SUPs, anything similar when standing on a kayak like this?

Yes, most fish can see color, and many see it better than humans do. It only holds up to 375 lbs. Unfortunately it wouldn't hold me and my gear so I'd be swimming.
