Was wondering how they dyed the stainless steel. Just ceramic coating that will start to chip off almost immediately.

Ceramic and ceramic coated knives are brittle yes, but the ceramic should not "immediately start chipping" assuming you aren't treating them like they are regular metal knives. Understanding their brittle nature and handling/using them appropriately (don't drop, don't chop, dont store loosely with other stuff, don't use on hard stuff like bone, etc) goes a long way in preventing chipping

i use these all the time. different colors or whatever, but i've never had an issue

my shun knives are used for special occasions only
