I've never owned one of these. I understand these have a legitimate compressor like a fridge does. What does it do with water condensation from the compressor? Does it collect it somewhere or have a tray to evaporate it or what?

Because these newer ones use actual compressors, unlike the Coleman peltier coolers of the 90s they would have to have a drip tray and evaporate with the hot side of the compressor like a fridge I would think

If in a car on a 12 hour trip you would probably be running the AC which would be supporting it in theory as the car air would already be dehumidified and cooled reducing the load on the cooler to get much lower

There isn't any water from the compressor, but this isn't frost free, so frost will build up on the inside. This takes a while, depending on how often the lid is openned.

Yes, that's exactly what we do. We put our drinks in the kitchen fridge and plug the portable fridge to pre-cool the night before. Then in the morning pack everything up. Works great!
