I own more than a few ceramic kitchen knives, and they're sharp as hell.
But, the problem is they break very easily.
If you use this type of knife, just a drop of a few feet can break the blade.

I'm guessing you've never used a ceramic knife. They can easily break just by hitting a hard object like a bone in a chicken breast, for instance.
Ceramic knives have no flex whatsoever. If you put the slightest pressure on the blade the wrong way, it'll most likely break.
As I said, ceramic knives are great, but they are also somewhat delicate.
