Take this for what it's worth...

I own more than a few ceramic kitchen knives, and they're sharp as hell.

But, the problem is they break very easily.

If you use this type of knife, just a drop of a few feet can break the blade.

it's not meant to be a throwing knife .. simple rule - don't drop it

Yes, it's not a throwing knife, and no one who has ever used a knife when fishing has ever dropped their knife.

I'm guessing you've never used a ceramic knife. They can easily break just by hitting a hard object like a bone in a chicken breast, for instance.

Ceramic knives have no flex whatsoever. If you put the slightest pressure on the blade the wrong way, it'll most likely break.

As I said, ceramic knives are great, but they are also somewhat delicate.

Agreed. In my opinion they are the worst possible field knife. Steel is real.

I got a little half moon chip in my Kyocera chefs knife. Makes me sad but I'll definitely buy a replacement eventually - amazing for most produce. My first ceramic was mid-90's, a Boker lock blade and a work buddy chipped it cutting a box open and hit those big copper staples. Frown

I hear you; with ceramic knives, it's always a love-hate relationship. If you don't understand that, you've probably never owned a ceramic knife.

I have a ceramic knife and don't think I'll get another. I'm more concerned about chipping. It's too easy for a bit of the cutting edge to end up in my food. I could just check the edge after prepping dinner but even better would be to just go back to steel.

It does happen with steel too. I was tapping the blade (not tip) of Henkels 8" 5-star chef to separate frozen burger patties. Tip was missing afterward. It may have happened prior but I had to toss that batch of patties. Not that diff than dropping a glass and having no friggin idea where all the little bits went. Ugh.
