I do a half cup of oats to a cup and a half of milk. 12 hours in the fridge. Maybe add a little yogurt and honey. It's kinda like eating grape nuts cereal.

Amazon is notorious for sending product near the end of its shelf life. What's the normal shelf life for something like this? Is it more like rice, and will last forever, or is it somewhat short lived? I'm a single person and would love to have these on my shelves.
Thanks in advance for your help and input on this.

Oats are around 7% fat. Over time that can turn Rancid. If they are at the end of shelf life that is a bad thing.

Add some collagen and whey a little salt, chia seeds for some extra fiber and protein.

True, but it probably won't happen right on the expiration date.
