This machine is substantially smaller than lower priced machines, will easily fit in a standard kitchen drawer for storage, is 1100 watts and heats water faster than most cheaper models, but the real value is in the app.
This model is the only sous vide on the market which offers algorithmic rapid-cooking, or "Turbo."
The app is incredibly user friendly and cuts traditional cooking times in half by raising the water temperature well above your target doneness at the start. Because heat transfers faster when there is a greater temperature difference, this pushes heat to the center much quicker before lowering the temperature to prevent overcooking.

They set their price a decade ago when these things were rare and hard to find a precise one. Or were 3x larger. Today even $150 is 3x what others cost. ATK rated some good ones for $45.

Good for the price! I have 2 Anova Sous Vide units. This will be a good replacement for the older one that has a crack in it.

Been using the Anova mini since January and its done its job. There's issues about premium features behind subscription paywall, but you can just set temp and time through the mobile app via Bluetooth for free. You don't need any extra features or functionalities at all honestly, but you might consider manual control settings on models that cost more.

I have an inkbird that works fine and for a couple of years now; I bought it as it does not need wifi connectivity as it has a manual pad for control. These are really simple machines and should not cost much. Basically, it's a souped up aquarium heater with a small plastic propeller on it to circulate water. I do love it as it cooks lean meats moister and more consistently than any other method I've ever tried--top sirloin and chicken breasts. And its very very forgiving.

I've had my OG Joule since 2018, before Breville acquired Chef Steps, and have no ragrats. The $180 I paid back then would be around their regular price today, accounting for inflation. I don't personally know anyone else with a Joule, but plenty with Anova, and they're happy. If you don't wanna swing the price, I think you'll be fine with either brand. As for this "turbo" business... seems pretty gimmicky. So you can push higher heat to get the meat heated through in what, like the first hour or two? The most common roasts I do sous vide are chuck or pork shoulder and those are 36 or 24hr cooks. Wow, so maybe I shave the durations down to 34 or 22hrs respectively? Talk about marginal 😂
