I have issues with expensive knives for home use. IDK why, I just do. I buy knives, they last 5-10 years and I sharpen them about every 6-8 weeks. I cook great food with my sharpened knives. Unless I was using the knives for a straight 8 hours a day, then my home kinda knives are perfect for me. I love hand me down knives too. I just got a set of very expensive wooden handle knives from a friend and to be honest, They cut no better than my 15 dollar set. They need more pampering which stinks for me. I can just place them in the sink a wash them later. I will probably treat them badly/however and move on if the wood cracks.
