Looking at the Zfc and it is a great deal at $650 with the 16-50DX lens. It is available in Chrome or Black for that price.

Slickest deal in this nikon refurb sale has to be the Z 40mm f/2 lens at $144 shipped. The value of that lens is probably near the top without this sale. At $144 it's a no-brainer if you need a light, low-light lens.

Was able to grab the Z50 when it was $314. It's still in stock but at $350 now. It's $450 with the 16-50mm.

This or the Z50 ii for a beginner? Feel like we should spring for the ii given the autofocus improvements, despite price difference.

Depends.
The biggest difference between the two cameras is the processor and AF system. The Z50ii has the Expeed 7 processor which means better at AF. It's Nikons cheapest camera with the "next gen" processor
If you have the cash and plan on keeping your camera long term the Z50ii is probably worth the jump at $650 if you can get it in stock (which it's out of stock). But, at that price point you can start making the case you might as well save up and get a Z5ii in the referb sales for $1200.
With that being said the Z50 has a pretty good reputation from the reviews I read/watched, even if it's using the Expeed 6 processor. I'm planning on it as a backup camera, so I don't mind it having some limitations for the cheap cost. Chances are buying it with the 16-50mm kit lens will be a great starter set up for you.

I'm 2 cameras in on Sony APSC cameras. But I would love to try other systems. One of these refurbs seem like a good way to dip my toe into some Nikon

I'm trying to find a simple point and shoot camera at an affordable price, but having a lot of difficulty. It seems like they stopped making them as camera phones got better. It's for my daughter and a phone is not an option. I have a few nice cameras myself, but they are too expensive for me to be willing to send with my daughter for camp.

Basically there are cheap "scamcameras" that are $75 and under you should never buy, not great Kodak options starting at like $100 but may be you only option if buying new on a low budget (some might be OK enough if you can't bring a phone but be sure to check reviews closely to pick one that wouldn't be so bad), there are a few actual good point and shoots left at like $600+ new (mostly recycled like 10 year old tech, but still relatively nice).
Unfortunately even on he used market you now have to significantly over pay compared to what they should be worth.
On the used market very old but still decent enough point and shoots tend to start at like $170-225. But for that price you can also get a DSLR and lens with superior image quality, such as a Nikon D3300/D3200 or a Canon SL1.

For a beginner, Z50 is plenty. It's also on sale pretty much every month at this time (3rd? Tuesday). Get it with the 16-50mm. Once you outgrow it, you'll have a better sense of what you need. You'll either be able to resell it for near what you paid or keep it as a travel camera. Z50ii is much better, but for a beginner, z50 is just fine

Z50's going to be the better body, but the 16-50 will limit your reach. You'll eventually want the 50-250mm. For a true beginner, probably the Canon just bc of the zoom. You're not going to go wrong with either, though, and you'll be able to sell either w/o too much trouble once you upgrade.
