As for your Indian comparison, no, tumeric is not a basic taste/flavor. Do you see a tumeric rating on foods? Nope, but you will see "Hot" on menus and labels. While some people may not like tumeric, it doesn't cause literal pain nor is it counterindicated for people with ulcers, etc. Sorry, but for people can can't physically tolerate hot foods, your tumeric comparison is nonsensical.
In terms of food, capsaicin literally numbs parts of your tongue and taste buds. In other words, it can stop you from tasting delicate flavors, undertones and nuance. So why not recognize that different people have different tolerances, and allow consumers to adjust the heat with a separate chili pack?

I have a degree in botany and make/sell hot sauce at the farmer's market, so I was familiar with capsaicin and its main reason for existing being a chemical irritant for mammals. I will say though that while it does activate the heat receptors where it touches (and also agree that on paper, it's really strange anyone would even want to eat it), the majority of flavor, delicate or otherwise, is olfactory. Too hot can be a physical distraction, but tolerance allows all the flavor and also an extra sensation you can't get anywhere else.
I guess I just see it as "that's how they eat it and that's the way it is", rather than thinking people should cater things to my taste. Your mention of the mi goreng packets (best ramen ever) is something I hadn't thought of though, you're correct.
